So it makes sense we’d whip out our favourite kitchen classic, the Le Creuset Cast Iron Casserole Dish, to whip up the hearty dish. A naturally vegan recipe, traditionally paired with a crusty baguette smothered in salty butter. Ratatouille is one of our favourites for autumn & winter.

For this recipe, we love to use the Round Cast Iron Casserole dish – an essential kitchen classic. What we love about this all-in-one dish is it’s versatility – its suitable for all hob types, including the oven, induction and under the grill.

Le Creuset, Ratatouille Provençale Recipe

Ingredients

  • 500g aubergines, cut into pieces
  • 500g courgettes, cut into pieces
  • 500g yellow and red peppers, cut into pieces
  • 3 onions, thinly sliced
  • 700g tomatoes, peeled, seeded, roughly chopped (alternatively 500g canned diced tomatoes)
  • 4 garlic cloves, finely chopped
  • Fresh herbs (such as basil)
  • Drizzle of olive oil
  • Salt and pepper

Method

  1. Over medium heat, add a drizzle of olive oil into the Le Creuset Casserole.
  2. Fry the aubergines, courgettes, and peppers one after the other.
  3. Add another drizzle of olive oil to the casserole and add the onions, tomatoes, garlic, pepper, salt and herbs.
  4. Cover and simmer over a low heat for 1 hour and stir occasionally.
  5. If necessary, add a little more olive oil or 2-3 tablespoons of boiling water.
  6. Serve warm with a sprinkle of fresh herbs. Basil is our favourite.
