The Mickey Mouse Pancake Recipe
The Ingredients
250g of classic wheat flour
4 fresh eggs
450ml of warm milk
1 C. tablespoon vanilla extract
2 tbsp. sugar
1 pinch of salt
50g melted butter
The Method
- Melt the butter in the microwave and slightly heat the milk. Note that the milk should be barely lukewarm to avoid lumps.
- Mix sifted flour, sugar and salt in a large bowl. You can replace the 50g of flour with cornstarch for a lighter batter.
- Add the eggs, the melted butter, then gradually add the milk. Whisking it well to avoid lumps.
- Add beer, rum, or even orange blossom water, then add the vanilla and leave the ingredients to set for 30 minutes.
- Heat a knob of butter in the pan and lay out a ladle of batter.
- Then spoon two small amounts of batter to make the Mickey Mouse ears. Use the spoon to shape the batter into rounds. When the batter starts to bubble, carefully the flip Mickey pancake.
- Cook your Mickey pancakes on each side, until they are all golden brown.
- As you go, set them aside on a plate, covering them with aluminium foil – to keep them warm and fluffy. You should get between 15 and 20 pancakes with a 20 cm diameter pan.
- Serve them with fresh berries and a sprinkle of powdered sugar for a beautiful and delicious breakfast.
