We’ve taken inspiration from our friends over at SheerLuxe to create this absolutely delicious-looking masterpiece. It tastes like a tiny bit of heaven: creamy, fruity Eton Mess between layers of pancake, topped with warm, white chocolate to give it a sweet finish.
We’ve cleverly named it the PancakeCake
It’s really quite simple to make. All you need is an electric whisk, the ingredients, a bit of creativity and only a small amount of balance. Here’s how to create this delectable, 6-floor tower of joy.
Ingredients
Serves 8
– 6 large, thin pancakes (this number can vary, but the more you have, the taller your cake!)
– 300g strawberries
– 300g raspberries
– 150g blueberries
– 1200ml double cream
– 8 x 7.5cm ready-made meringue nests
– 2 packs white chocolate
– Decoration option: hundreds and thousands sprinkles
Method
- Put a handful of each fruit to the side, to use as decoration later
- Pop half the remaining pack of strawberries into a blender and give them a quick whizz to mush them up. Chop the other half of the pack up with a knife. Mash the raspberries with a fork
- Whip the double cream until stiff peaks form. It takes a little bit of perseverance but it will eventually get firmer, promise.
- Fold in the strawberry pulp, chopped strawberries, mashed raspberries and your punnet of blueberries.
- Crush the meringue nests and fold these into the cream
- Now the fun bit, the architecture! Pop a pancake on a cake stand and spoon 1/6th of the mixture onto it. Spread it evenly and make sure you go right to the edge of the pancake. Pop another pancake on top and then 1/6th cream mix again. Repeat until all 6 pancakes are stacked high.
- Spoon the remaining cream over the top of the pancake, then sprinkle hundreds and thousands over the top.
- For the finishing touch, melt the white chocolate in a microwave in a microwaveable dish. Pour this over the top, ensuring you get some good dribble down the sides. Now you can position the fruit you’d put aside on top.
